Originally, the “拉” in ‘拉麺’ (ramen) means “to pull.” Lanzhou ramen allows for noodles of varying thicknesses by repeatedly stretching and pulling the dough block by hand.

Bringing Traditional Flavors to Japan
The owner of the Japanese branch spent his university years in Beijing, where he fell in love with Lanzhou beef noodle soup.
After returning to Japan, he desperately wanted to eat Lanzhou beef noodle soup but found no restaurants serving it, so he resolved to open one himself.
Initially, he experimented on his own, but he couldn’t master the complex combination of medicinal herbs and spices or the technique for hand-rolling the noodles.
He decided to go to Lanzhou itself to find a Lanzhou beef noodle soup restaurant where he could train.
He sampled Lanzhou beef noodle soup at dozens of shops locally, finding ‘Ma Zilu’ to be the most delicious.
He requested to train there but was initially turned down.
Nevertheless, his repeated visits eventually conveyed his seriousness and passion, and he was finally granted permission to train.
He was thoroughly taught everything from noodle-making to soup preparation and chili oil production, leading to the opening of the Japanese shop.
